STUFFED MUSHROOMS – Boost your Vitamin D deliciously
SERVINGS: 4 | PREP TIME: 15min | COOKING TIME: 15min | TOTAL: 30min
INGREDIENTS
- 2 SP Olive Oil
- Button Mushrooms
- Onion garlic
- Panko
- A pinch of salt
- Black Pepper
- Coconut oil
DIRECTIONS
- Preheat the oven at 350 F
- Clean the mushrooms and take the stem out
- Mince the onion, garlic and stems very small until they are almost a coarse paste
- Put 2 Spoonfuls of olive oil on a pan and, once hot, cook the paste until you see the onion translucent and the mix dry.
- Stuff the mushrooms with the mix.
- Melt the coconut oil and mix it with the panko in a small bowl.
- Top each mushroom with the panko.
- Bake for 15 minutes or until the panko is golden.
- Serve with a fresh green salad with Sweet Vinaigrette.
NOTES
- Always make sure the oil is not smoking when cooking.
- The coconut oil can be replaced with vegan butter.
