TOMATO SOUP – Vitamins & antioxidants unleashed
SERVINGS: 2 | PREP TIME: 15min | COOKING TIME: 30min | TOTAL: 45min
INGREDIENTS
- 2 Lbs Roma tomatoes
- 1 Los cherry tomatoes
- 1 small red onion
- 1 garlic head
- 1 basil leaf branch
- 1 small red bell pepper
- 2+2 Tbsp olive oil
- Salt & pepper
- 1 tsp oregano
- 1/4 cup cannelli beans
DIRECTIONS
- Preheat the oven at 350° F
- Roughly cut tomatoes, pepper and onion
- Cut the top of the garlic head and cover with foil
- Put 2 Tosp of olive oil on a pan and place the tomatoes, onion, basil leaves, whole garlic head and pepper.
- Bake until the garlic is tender. Then squeeze out the
“meat” - Once ready, place all ingredients in a blender and process until smooth.
- Add 2 Tbsp of Olive Oil, 1 tsp of oregano, beans and continue blending.
- Add salt and pepper to taste.
- Serve with a croutons or refrigerate until use.
NOTES
- Use only the basil leaves, not the stems.
- You can add a Tbsp of sugar when processing for a sweet edge
- The beans add 11 gr protein!!!
